Whew! This weekend was a HOT one! You can definitely tell it’s summer now. Summer is the best time to enjoy tomatoes and basil and the absolute best time to enjoy some Mozzarella Cheese. My absolute favorite snack during the summer is to cut up some mozzarella cheese slices with tomatoes and basil and drizzle some balsamic vinaigrette on top. So refreshing and so so yummy!
Well, this time I decided to take it a step further and pile a Caprese salad on top of a buttery garlic piece of toast. Mainly because I was craving some melted mozzarella cheese, do you get what I mean?
This recipe is really easy and is sure to impress any guests for an appetizer, should you have a summer get-together. The Stella Mozzarella cheese, in particular, is soft with a delicate texture and pairs perfectly with a crisp wine. It is absolutely perfect for a summer night out on the patio.

1) Slice your Stella Mozzarella Cheese block into 1/2 inch pieces. Also, slice up one ripe tomato.
2) Cut up some Italian Bread slices and brush a mixture of butter and garlic on top of each slice. Place in the oven at 350 degrees for about 6-8 minutes.
3) Cover the sliced tomato slices in balsamic vinaigrette. Let the vinaigrette soak into the tomato slices for a minute.
4) After the bread is toasted, place the mozzarella slices on top and place in the oven for about 3 more minutes. At the same time, place the tomatoes into the oven as well to roast them for just a few minutes.
5) Take out the bread slices and the tomatoes. Place the roasted tomatoes on top of the bread slices and top each with sliced basil leaves. Enjoy!!
Caprese on Toast
Ingredients:
- Stella Mozzarella Cheese
- Sliced Italian Bread
- One Ripe Tomato
- Balsamic Vinaigrette
- Fresh Basil Leaves
- 1 Tbsp Butter
- 1 Garlic Clove, minced
Recipe:
- Preheat your oven to 350 degrees. Prepare your ingredients: Slice up your Italian bread, slice the Mozzarella in 1/2 inch increments, slice the ripe tomato.
- Melt your butter in a bowl for 15 seconds and then combine with your minced garlic.
- Brush your butter mixture on top of your bread slices. Place in the oven for 6-8 minutes until toasted to your preference. While the bread is toasting, soak your tomato slices in balsamic vinaigrette.
- After the bread is toasted, take it out and place your mozzarella slices on top. Put back into the oven for 2 minutes. Also, place the tomatoes soaked in balsamic vinaigrette into the oven for two minutes.
- Take out the bread slices, the mozzarella should be melted by now. Place the tomato slices on top and then top with sliced basil leaves and enjoy!!
