Easy Beef Curry

Happy Friday guys! Joe and I have decided that we eat out too much on the weekends and are really trying to stick to our goal of eating out 4x a month. With that being said, it’s a good thing I love cooking because trying to achieve that goal would just be dreadful!

I’m bringing you guys an extremely easy recipe today. If you remember my Ginger Tea, you’ll remember that I promised to bring you guys more recipes. Food Blogging is a whole different world that I am not familiar with, but I do love food so I want to share that with you guys.

Here is an easy curry recipe that you can enjoy over the weekend…

EASY BEEF CURRY 

INGREDIENTS

  • One large onion, diced 
  • 4 cloves garlic
  • One large potato
  • 1 cup frozen peas  
  • 1 pound ground beef 
  • 2 tablespoons olive oil 
  • 1 1/2 cups beef broth (or water)
  • Spices
  • 2 tablespoons curry powder 
  • 1 tsp turmeric powder
  • 1 tsp cumin
  • a dash of agave
  • 1 teaspoon salt 
  • dash of pepper 
INSTRUCTIONS
  1. Saute onions and garlic in oil until fragrant. 
  2. Add the potatoes and cook for about ten minutes on medium-high heat. 
  3. Add the ground beef and cook until browned. 
  4. Add all of the spices and incorporate until well combined. 
  5. Add the beef broth (or water) and cook until potatoes are tender and liquid has simmered down. If you want a thicker consistency, feel free to add a cornstarch slurry (1 tsp cornstarch and 1 tsp water mixed together). Add the peas and cook until combined. 
  6. Serve over rice and enjoy! 
I love having an easy curry on hand and Joe will eat this up. Let me know if you try it and what you think!
