Happy Friday guys! Joe and I have decided that we eat out too much on the weekends and are really trying to stick to our goal of eating out 4x a month. With that being said, it’s a good thing I love cooking because trying to achieve that goal would just be dreadful!
I’m bringing you guys an extremely easy recipe today. If you remember my Ginger Tea, you’ll remember that I promised to bring you guys more recipes. Food Blogging is a whole different world that I am not familiar with, but I do love food so I want to share that with you guys.
Here is an easy curry recipe that you can enjoy over the weekend…
EASY BEEF CURRY
INGREDIENTS
- One large onion, diced
- 4 cloves garlic
- One large potato
- 1 cup frozen peas
- 1 pound ground beef
- 2 tablespoons olive oil
- 1 1/2 cups beef broth (or water)
- Spices
- 2 tablespoons curry powder
- 1 tsp turmeric powder
- 1 tsp cumin
- a dash of agave
- 1 teaspoon salt
- dash of pepper
INSTRUCTIONS
- Saute onions and garlic in oil until fragrant.
- Add the potatoes and cook for about ten minutes on medium-high heat.
- Add the ground beef and cook until browned.
- Add all of the spices and incorporate until well combined.
- Add the beef broth (or water) and cook until potatoes are tender and liquid has simmered down. If you want a thicker consistency, feel free to add a cornstarch slurry (1 tsp cornstarch and 1 tsp water mixed together). Add the peas and cook until combined.
- Serve over rice and enjoy!
